The methods of freeze-drying has advantage over any other drying methods such as hot air-drying. The temperature during the whole drying process of  freeze-drying is less than 50oC, so FD products have the following advantages:
1. Remain original characteristics of the product, including color, shape, size, taste, texture, nutrients
2. Reconstitutes to original state when placed in hot water.
3. The weight of freeze-dried products is reduced by 70 to 90 percent, with no change in volume.
4. Cold storage is not required.
5. Shipping costs are reduced because of the light weight and dry characteristics.
6. Low water activity virtually eliminates microbiological concerns.
7. Offer highest quality in a dry product compared to other drying methods.
